When the water starts to boil, the heat is turned off, allowing the chicken to cook in the residual heat for around 30 minutes. The advantage of it is the chicken’s skin will remain light-coloured; nearly white and the meat will be quite tender, moist and flavourful. The shortcoming is that the dish can be served “rare” in which the meat is cooked thoroughly but a pinkish dark red blood secretes from the bones. It may not accord with the hygienic requirements.

白切鸡的由来:
从前有一个农夫, 生活清贫。这年中秋又到,他和妻子商量了一下,决定杀只母鸡。妻子刚将母鸡剥洗干净端进厨房,忽然窗外有人呼嚎哭喊。原来是小孩贪玩灯笼酿火灾,一些村民的家财眼看要化作灰烬。农夫二话没说,揣起一个水桶就冲了出去,他的妻子也跟着去救火。在村民的共同努力下,火势很快得到了控制,并最终被扑灭。农夫回家时灶火已熄,锅中水微温。原来妻子走得匆忙,只在灶中添柴,忘放佐料和盖上锅盖。而锅中光鸡竟被热水烫熟了!于是,白斩来吃,原汁原味,皮爽肉滑,美味可口,因此白切鸡被流传下来。

In Qing dynasty, roast suckling pig, this Cantonese dish, was listed on the Manchu Han Imperial Feast. Nowadays, it’s still an important dish in Guangdong. Usually, 5-kilo sucling pigs will be chosen and killed. Open the belly, remove the ribs, fold the pig with a special barbecue fork and put it into oven. The meat from suckling pig is pale and tender and the cooked skin is crisp.
